Mini quiches with Spinach and Bacon

Isn't it true that bacon makes everything better? These Spinach Bacon Mini Quiches are a great high-protein, grain-free portable lunch idea, and a terrific gluten-free breakfast!

Getting kids to eat their leafy greens without turning up their noses can be challenging, but these mini quiches are sure to get them just as excited about eating their greens as they are about eating bacon. And once they try these, they will also love these Cheesy Spinach Egg Cups.

For these mini quiches, the spinach magically becomes confetti, adding a fun splash of color to each bite. Add cooked bacon to the equation, and you have a ridiculously tasty food to pack on the lunchbox along with their favorite lunch sides.

Ingredients

Combine simple and delicious ingredients and you’ll get amazing spinach bacon mini quiches for the lunchbox or a perfect gluten-free breakfast. Here’s what you need:

  • Eggs: help combine all the ingredients while adding protein.
  • Milk: use regular milk or your favorite non-dairy alternative.
  • Spinach: finely chopped to sneak nutrition into every bite!
  • Shredded cheese: Mozzarella, Colby Jack, Mexican cheese blend, pepper Jack, Swiss, or any variety of Cheddar. You choose!
  • Bacon: cooked and chopped bacon strips make everything tastier!
  • Pepper: just a dash, for extra flavor.

How to Make Spinach Bacon Mini Quiches 

This is one recipe kids can also help make. It’s all about mixing ingredients in a bowl, filling the muffin pan, and letting the oven do the rest! Check out the simple process:

  1. Prep
    Preheat oven to 350F and grease a 24-count mini muffin pan. If using a regular muffin pan, baking time will vary.
  2. Whisk & combine
    In a large bowl, whisk eggs and milk. Add in chopped spinach, shredded cheddar, chopped bacon, and pepper. Give it a quick mix to combine all the ingredients.
  3. Fill the muffin pan
    Distribute the egg mixture evenly into the muffin pan cups, filling them about ¾ of the way up.
  4. Bake
    Bake in the preheated oven for 15-18 minutes. If using a regular-sized muffin tray (yields 12), baking time requires approximately 26 to 28 minutes.
  5. Remove the mini quiches
    Remove the pan from the oven and let mini quiches cool in the pan before carefully removing them with a small knife or small spatula.
  6. Refrigerate
    Once cooled, refrigerate the mini quiches in an airtight container or zip bag for up to 3 days.

How to Store These Mini Quiches

Once the spinach bacon mini quiches are done, out of the oven and have cooled down to room temperature, remove them from the muffin tray and transfer them inside a zip bag or airtight container. Refrigerate them for up to 3 days.

Should they be Eaten Warm, Cold or at Room Temperature

There’s no right or wrong temperature to enjoy these mini quiches. You can eat them cold straight out of the fridge, at room temperature when packed in a lunch container, or warm from a thermos. 

How to Pack Mini Quiches in a Thermos

To enjoy mini quiches warm at lunchtime, they’ll need to be heated up and placed inside a thermos container. While they won’t be as hot as out of the microwave or oven, they’ll stay warm.

How to Pack Spinach Bacon Mini Quiches for Lunch

Cold, warm, or at room temperature, these mini quiches make a terrific portable lunch packed with flavor and nutrition! 

However you prefer to enjoy them, here are the hacks to pack them:

  • To enjoy these at room temperature, place 4 to 6 mini quiches inside the main compartment of a lunch container.
  • To eat warm, heat the mini quiches in the microwave for 1 minute, stopping the microwave halfway through to flip them over. Immediately transfer them inside a thermos container and close the lid.
  • Finish packing this lunch by adding fruit, veggies, and any other sides inside a bento box. Pack everything inside a lunch bag.

    Hello,
    thank you SO MUCH for all the great recipes. I am trying a few of them but have a question. can these be saved in the freezer, especially if i vacuum seal them? and if so, do you know for how long? i kind of went a bit nuts on trying different things and not sure that we can eat them all in 3 days.

    thank you in advance for your response and again, thank you for all the great recipes, it was tough to narrow it down to “just a few” and even then, like i said, i went a bit overboard.

      Thank you for sharing how much you enjoyed this recipe, Priscilla! Yes, you can freeze them in an air-tight container or bag for up to 2 months or so. They don’t go bad per se I just feel like they change in texture. All you have to do is microwave them and you’re good to go! These are much more affordable than buying them ready-made from the freezer and you get to choose your ingredients. No such thing as going overboard, you’re prepared!
