Breakfast Bento with Waffle Sandwiches

“Mom! I don’t like waffles,” said no kid ever. That’s one of the reasons this bento is always a hit. We’re talking about an easy-to-pack and nutritious breakfast-inspired bento kids will devour.

You can use homemade waffles or your favorite ones from the freezer aisle for this breakfast on the go! All you need is a lunch container with compartments to keep things separate and easy to eat on the way to school or at school.

Plus, you can add extra nutrition by adding a serving of fruit on the side; so let’s make this breakfast bento and learn all the packing tips!

What goes in this Breakfast Bento

This drooling-guaranteed breakfast bento to enjoy on the way to school is made with tasty staples all kids love:

  • Mini waffles: you can also use regular-sized homemade waffles sliced in half.
  • Whipped cream cheese: helps to hold the peaches and keep the waffles from getting soggy.
  • Sliced Peaches: fresh or frozen (thaw them before using). No peaches? Make this bento using strawberries!
  • Sides: pack this waffle sandwich with fruit, veggies, nuts, or other healthy sides.

How to Make Waffle Sandwiches for Breakfast on the Go

I can’t decide what takes less time: making this breakfast bento in 5 minutes or your kid devouring it on the way to school! Check the easy steps:

  1. Toast
    First, you lightly toast the mini waffles in a toaster. You can also toast a regular size homemade waffle.
  2. Spread
    Now, you add a little whipped cream cheese to one side of each mini waffle. It acts like a barrier to keep the waffle from getting soggy.
  3. Add the peaches
    You place the sliced peaches on top and close the waffle sandwich.
  4. Assemble the bento box
    Place the waffle sandwiches inside your bento box along with some fruit and your kid’s favorite sides.
  5. Pack it for breakfast
    Place the breakfast bento box inside a lunch bag, with an ice pack if necessary.

More Tips for Packing this Breakfast Bento

Follow these tips for packing this epic breakfast bento properly to enjoy it on the way to school:

Separate wet from dry
A compartmentalized container is your best friend for packing breakfast bentos to eat on the way to school or at school. Make sure to separate the dry ingredients (nuts, crackers, etc.) from the sandwich waffles to keep them from getting soggy.

Use your favorite waffles
I like to make these sandwiches with whole-grain mini waffles, but you can use your favorite store-bought mini waffles or make one waffle sandwich with a regular-sized homemade waffle sliced in half and toasted.

Thaw the peaches
If using frozen peach slices, thaw them out first. Once thawed, carefully slice them in half into thin peach slices. 

Add nutrition
Veggies and fruits are always a terrific addition to any bento. This time, I included edamame beans and walnuts, but you can also include fruit, carrot sticks, celery, sliced bell pepper, or another crunchy favorite.

Ingredients

  • 8 mini waffles
  • 2 tablespoons whipped cream cheese
  • ½ peach, sliced thin*

Instructions

  • Lightly toast the mini waffles in a toaster. Alternatively, you can make one waffle sandwich with a regular-sized homemade waffle sliced in half and toast it.
  • Spread a little whipped cream cheese directly onto each mini waffle. Place the sliced peaches on top and close the waffle sandwich.
  • Place the waffle sandwiches inside a bento box along with some fruit and your favorite sides.
  • Pack this breakfast bento inside a lunch bag, with an ice pack if necessary.

Notes
