Bacon & Chicken Sandwich for School Lunch

Laura Fuentes holding a stack of lunchboxes and a school lunch bag

Bacon makes just about any sandwich better, and this is one I make for my teen boys on repeat. I can microwave the bacon in 2 minutes and use deli-sliced chicken or cooked leftovers to build it, and in about 5 minutes, I have a filling teen lunch packed.

How to Assemble It

  1. Toast the bread
Lightly toast the bread and let it cool before adding your favorite spread.
  2. Build the sandwich
Layer lettuce, chicken, crispy bacon, and tomato. Keep the lettuce against the bread so the tomato doesn’t make it soggy. You can use deli chicken, shredded chicken, or thinly sliced seared chicken breast.
  3. Pack it for lunch
Place the sandwich in a hard lunch container and keep your lunch sides in separate compartments. Refrigerate until it’s time to pack the lunch bag.

Laura’s School Lunch Packing Tips

What type of chicken works best?

Deli-sliced chicken is the fastest option, but leftover chicken breast, rotisserie chicken, or shredded chicken all work. Use whatever you already have in the fridge.

What condiment should I use?

Thousand Island and mayo are my go-tos, but Ranch, BBQ sauce, honey mustard, or ketchup also work. Use just enough to add flavor without making the bread wet.

How do I keep it from getting soggy?

Keep the lettuce against the bread and place the tomato toward the middle of the sandwich. When packing sandwiches for lunch, I also keep fruit, veggies, dips, and other moist sides in separate compartments.

What’s the best way to pack it?

Use a firm lunch container so the sandwich doesn’t get flattened. Keep it refrigerated until you’re ready to leave and add an ice pack to the lunch bag.
