Bacon & Chicken Sandwich for School Lunch
When you combine crispy bacon, deli-sliced chicken and a few fresh ingredients, you get an epic sandwich you can turn into an incredible lunch for school.
You can also swap the deli meat for leftover chicken breasts if that is what you have on hand.
What You Need
This sandwich may look like a meal you order at Panera Bread, but it’s actually much quicker and cheaper to make at home!
- Sourdough: or your favorite sliced bread!
- Chicken: sliced deli chicken for lots of protein.
- Bacon: crispy, savory, tasty! Which you can make in the microwave real quick.
- Tomato: sliced for loads of juicy taste.
- Lettuce: added crunch, texture, and nutrition.
- Dressing: we love Thousand Island or Ranch for this.
Best Condiments for a Chicken Sandwich
Chicken has such a neutral taste that I love pairing it with my favorite dressings, such as storebought or homemade Ranch and Thousand Island. Sometimes, I simply use a little mayo, BBQ sauce, honey mustard, or even ketchup.

How to Assemble a Chicken Bacon Sandwich
After making this epic chicken bacon sandwich lots of times, here are some of my assembly tips that ensure success:
- Toast the bread
Lightly toasted bread gives this hefty sandwich a sturdy base to hold all the ingredients in. - Layer the ingredients
When making a sandwich for lunch, I like to put the lettuce next to the bread, never the tomatoes, to prevent it from getting soggy. - Build the sandwich
Use sliced deli chicken, shredded chicken, or thinly sliced seared chicken breasts for this sandwich. - Pack in the lunch bag
Place the sandwich in its own compartment and the lunch sides separately. If necessary, add an ice pack inside the lunch bag.
Packing Chicken Sandwiches for Lunch at School
Follow these tips to ensure when you pack chicken sandwiches for school they stay fresh until lunch:
Use a firm container
Packing a sandwich in a zip bag will often turn any sandwich into a soggy mess. Instead, use a firm, sturdy container so it won’t get flattened in the lunch bag.
Prevent bread from getting soggy
If you're going to add tomato and pack it for later, place the lettuce next to the bread so the tomato doesn't make the bread wet.
Pack sides and dips separate
Want to pack sauces or dips for those vegetable sides? These small lidded containers are a great addition to a lunch and keep it fresh and delicious.
Fruits & Veggies can be Fresh, Frozen, or Canned
Frozen and canned items have a longer shelf life than fresh produce, but all options are great for adding nutrition.

Chicken Bacon Sandwich

Ingredients
- 2 slices Sourdough bread
- 3 oz deli sliced chicken
- 2 teaspoons Thousand Island , or mayo
- 1-2 strips of bacon, cooked crispy
- 2 green lettuce leaves
- tomato slices
Instructions
Make the sandwich:
- Lightly toast the bread to a golden color. Once toasted, spread the Thousand Island dressing, or mayonnaise, on each slice.
- Place the sliced chicken on one bread slice, top with crispy bacon, tomato slices, and lettuce leaves. Top with the other toasted bread slice and close the sandwich.
- Slice the sandwich in half or pack it for a school lunch.
Pack for lunch:
- Place the sandwich in the main compartment of the lunch box. Pack any sides, like fruit and veggies, in separate compartments or containers to prevent the sandwich from getting soggy. Refrigerate or pack it inside the lunch bag with an icepack if necessary.
