Hard Boiled Egg and Tomato Salad

This quick and easy lunch salad with hard-boiled eggs is packed with protein, good fats, and fresh veggies, plus all the crunchy and creamy textures that my kids love in a healthy school lunch.

Adding bacon to a salad has always been a surefire way to get my kids more excited about eating veggies. Now they ask for their faves, like this tasty cobb salad or a crispy BLT salad at least once a week!

Ingredients

The combination of hard-boiled eggs, bacon, and grape tomatoes makes this salad both nutritious and delicious. You can find exact measurements in the recipe card below or check out this quick rundown of what you’ll need:

  • Lettuce: use romaine or butter lettuce for crunch; swap with spinach if desired.
  • Hard-boiled egg: packed with protein, it's easy to prep ahead for the week.
  • Grape tomatoes: sweet and kid-friendly; can substitute with diced cucumber.
  • Bacon: for flavor and crunch, use bacon or bacon bits; croutons work in a pinch.
  • Dressing: think ranch, vinaigrette, or whatever your kids love.

How to Make a Salad with Hard Boiled Eggs

This salad comes together pretty quickly, especially when the eggs and bacon are prepped beforehand. These assembly tips will help keep everything fresh:

  1. Boil and peel the eggs
    This is best done in advance. Boil a batch of eggs, then peel one and store the rest in the refrigerator for later use.  Using an instant pot to boil the eggs will speed up this step.
  2. Cook the bacon
    You can microwave bacon ahead of time it to speed this process.
  3. Prep the ingredients
    Slice the egg; chop the bacon; cut the tomatoes in half.
  4. Layer the salad
    Put lettuce in a container, then add egg, tomatoes, and bacon.
  5. Dressing
    If eating right away, drizzle with dressing; otherwise, pack the dressing separately to keep the salad fresh.

How to Pack Salad Dressing for Lunch

To keep this salad from getting soggy, it’s best to wait until just before eating to drizzle on the dressing. Use a small, leak-proof container that holds about 2 tablespoons or 2 ounces-these are my go-tos.

Make ahead
Making the hard-boiled eggs and bacon or bacon bits in advance will enable you to pull the salad together quickly in the morning.

Use the right container
Pack the salad in a hard, lunch container to keep everything from moving around in a lunch bag or backpack.

Keep it safe
Use an ice pack to regulate the temperature inside the lunch bag and keep everything cool and fresh for hours.

Ingredients

  • 2 cups chopped lettuce
  • 1 hard-boiled egg, chopped
  • ½ cup grape tomatoes, halved
  • 1 strip of bacon, cooked
  • 2 tablespoons salad dressing

Instructions

Prep:

  • Boil the hard-boiled egg, or a batch of them, and peel them. Refrigerate in an airtight container for up to 5 days.
  • Cook the bacon in the microwave or in a pan, let it cool off for a few minutes, and coarsely chop it into pieces. You can also use a tablespoon of bacon bits.

Assemble:

  • Make a bed of lettuce in the bottom of a lunch container. Top it with the chopped egg, tomatoes, and bacon pieces. Drizzle with dressing if eating the salad immediately. If not, hold off the dressing.

Pack it for Lunch:

  • Fill a small lidded container with the salad dressing. Refrigerate the dressing and the salad until it's time to leave and pack it inside a lunch bag with an ice pack. Drizzle the dressing right before lunch.
