Crispy Chicken Wrap for School Lunch

Laura Fuentes holding a stack of lunchboxes and a school lunch bag

Whenever I make my famous chicken strips for dinner, I always cook a few extra because I know they'll become these wraps the next day. In busy weeks, I throw a few frozen chicken tenders in the air fryer, and they work just as well. It's filling, easy to eat, and different enough from the usual sandwich that it never gets old in our lunch rotation.

Packing It for Lunch

  1. Make the wrap
Cook the chicken strips according to the package directions or use leftovers from dinner. Layer lettuce, tomato, crispy chicken, and ranch dressing inside a tortilla, then roll it tightly burrito-style.
  2. Keep it fresh
Place the lettuce against the tortilla before adding the tomatoes. It creates a barrier that helps keep the tortilla from getting soggy. If you're making lunch the night before, keep the wrap whole and slice it just before packing in the morning.
  3. Pack it for school
Place the wrap in your lunch container, along with fresh fruit, veggies, and a favorite snack, in separate compartments. Refrigerate until you're ready to leave, and add an ice pack to help everything stay cold until lunchtime.

Laura's School Lunch Packing Tips

Can I make this the night before?

Yes. Assemble the wrap, wrap it tightly, and refrigerate overnight. For the freshest texture, slice it just before packing in the morning.

Do I need to reheat the chicken?

No. This wrap is meant to be packed and enjoyed cold, making it a great option for school lunches without a Thermos.

How do I keep the tortilla from getting soggy?

Layer the lettuce directly against the tortilla before adding tomatoes or dressing. If your child likes extra ranch, pack it in a small container for dipping instead of adding more to the wrap.

Watch How It’s Made:

Ingredients

  • 1 large flour tortilla
  • 2 green lettuce leaves
  • 2 slices tomato
  • 2 chicken strips, cooked
  • 1 tablespoon Ranch dressing

Instructions

Prep:

  • If not packing this wrap for school and you're going to enjoy it right away, you can reheat the chicken tenders in the microwave for about a minute, in the oven at 350F for 10 minutes, or the air fryer at 350F for 6 minutes. This will give you crispy tenders to use in the wrap.

Make the wrap:

  • Place the tortilla on a flat surface. Place the lettuce leaves in the center of the tortilla and place the tomato slices on top. Arrange the cooked chicken strips on top of the tomatoes and drizzle with ranch dressing. Tip: go light on the dressing if you're packing this for school to prevent a soggy wrap. Pack a little extra dressing in a small lidded container for later.
  • Fold the sides in and roll the wrap burrito style. Slice it in half and serve or pack it inside a lunch container.

Pack the rest of the lunch:

  • Add fresh fruit and veggies as sides inside separate lunch containers or compartments of the lunch box.
  • Refrigerate the lunch until you’re ready to pack it inside an insulated bag for school. Include an ice pack if necessary.

I had some chicken strips leftover from dinner, so I tried to find a recipe to use them. This recipe turned out so great I even packed the wraps as an office lunch for myself. Thank you!
