Hummus Lettuce Tomato Sandwich

Tons of flavor and nutrition between two slices of bread! That’s what you get when you make this easy hummus sandwich for the lunchbox. Easy recipes like this one add variety to your lunch rotation in less than 5 minutes. Definitely a winner!

I’m a sucker for hummus as a healthier alternative to mayo, so it was a no-brainer spread it over bread! It’s creamy, delicious, and packed with nutrition. Add lettuce and tomato to the party and just like that, a homemade lunch is ready to pack!

If your family loves hummus as much as we do, this sandwich is just the beginning. Try this one, and then check out more healthy lunches with hummus for school. You’re going to love them all!

What you need

With four basic ingredients, you can build a satisfying hummus sandwich that your kid will ask for on repeat! Yes, simplicity can taste amazing. Check what you need:

  • Sandwich bread: use your favorite.
  • Hummus: traditional hummus or some delicious variations, like sweet potato hummus or sun-dried tomato hummus.
  • Tomato: slice any tomato and you have a fresh and nutritious filling for this sandwich.
  • Lettuce: use any kind of lettuce. It adds nutrition and keeps the bread from absorbing the tomato’s moisture.

How to Pack Hummus Sandwich for School

Packing a delicious hummus sandwich in the lunchbox is possible if you follow these simple steps:

  1. Make the sandwich
You spread the hummus over each slice of bread. Then, you place a piece of lettuce, tomato, and the remaining lettuce and bread. Placing the tomato between the lettuce leaves keeps the bread from getting soggy.
  2. Pack the sandwich
Now, you cut the hummus sandwich in half and pack it into a compartmentalized lunch container.
  3. Make it a meal
You can add your kid’s favorite school lunch sides to make the lunchbox more nutritious: fruits, veggies, healthy snacks, and tasty desserts are allowed!
  4. Refrigerate
Store the lunchbox in the fridge until ready to pack inside a lunch bag, with or without an ice pack.

More tips for packing sandwiches for lunch

Check the following tips to learn how to pack sandwiches in the lunchbox that stay fresh for hours:

Layer order matters
Since tomatoes are pretty juicy, place them right in the middle of the lettuce leaves. Lettuce works as a barrier and prevents the bread from absorbing any moisture.

Separate wet from dry
If you’re packing this hummus sandwich with veggies or fruit, place them in a separate lunchbox compartment. This way, you keep the bread from getting soggy.

Use a firm container
You want a lunchbox that keeps the sandwich in its place, meaning, not moving around inside the lunch bag. Use a sturdy sandwich-size container or compartment and the sandwich will remain neat, just as you packed it. Here are my top picks for lunch containers.
