Roast Beef Wrap with Veggies

Make this roast beef wrap filled with fresh veggies whenever you want a high protein hand-held lunch! 

Use your favorite deli roast beef and fresh vegetables to make this lunch wrap and learn how to keep it fresh for hours in a lunch box with the tips in this post.

Roast Beef and Veggie Lunch Wrap

I confess! I’m a huge fan of wraps! They’re perfect for quick, healthy lunches that are super easy to prepare and pack. I always keep tortillas handy for when my kids get bored of sandwiches because wraps are a quick and easy lunch to make.

Just like my ham and avocado wrap and Chipotle chicken wrap, this roast beef and veggie wrap is bursting with flavor, protein, and nutrients, making it the perfect school lunch to keep kids full until they get home at the end of the day.

Ingredients

The versatility of wraps is one of the things I love most about them. These are the ingredients I used and some of the swaps you can make:

  • Tortillas: A soft burrito-sized tortilla will make this easy to eat and keep the filling from spilling out.
  • Mayonnaise: While optional, it helps the lettuce stick to the tortilla and adds a creamy and tangy flavor. You could also substitute ranch dressing.
  • Veggies: lettuce, carrots and corn pair really well with roast beef, but feel free to experiment with your favorite veggies.
  • Deli roast beef: adds rich flavor and boosts protein.

How to Pack a Roast Beef Wrap for School

You can enjoy this now (I wouldn’t blame you), but here are some helpful tips for packing sandwich wraps if you want to pack them for school:

  1. Spread mayo
    A touch of mayo or ranch acts like a “glue” and helps keep all of the ingredients together as you roll up the wrap.
  2. Layer ingredients
    Place dry lettuce on the tortilla first and then the rest of the ingredients. This will help create a barrier and prevent the tortilla from getting soggy.
  3. Roll it up
    Roll up the tortilla like a burrito, folding in the sides and tucking the ingredients as you roll, if necessary.
  4. Pack it for lunch
    Keep this wrap in the fridge until ready to use. Then pack it in a lunch container keeping healthy sides like fruit and veggies separate. Include an ice pack to keep everything cool.

Keeping Lunch Wraps Fresh for School Lunches

Here’s how to keep these healthy lunch wraps delicious for hours, so they're just as good at lunchtime as when you made them!

Wait to slice it
If you are going to pack this for school, wait until just before putting it in the lunch container to cut it in half. This will prevent the wrap from drying out and will also keep the ingredients nicely tucked inside.

Use a durable container
Avoid a wrap wreck! After cutting your wrap in half, pack it in a sturdy lunch container about the same size as the wrap. This will keep it from getting squished and from moving around and getting messy.

Layer Strategically
Layering ingredients in the correct order will go a long way to preventing your wrap from getting soggy. Spread condiments like mayo or hummus directly on the wrap to help leafy greens stick in place. The lettuce will act as a barrier, preventing moisture from the wetter ingredients from reaching the tortilla. Then, add the rest of the filling and roll the wrap up tightly.

Ingredients

  • 1 large tortilla
  • 1 tablespoon Mayonnaise
  • Lettuce leaves
  • 1 Large carrot, grated
  • 2 tablespoons corn kernels
  • 3 ounces sliced deli roast beef

Instructions

Assemble the wrap:

  • Place the tortilla on a flat surface and spread the mayonnaise as a thin layer on top. Place the lettuce leaves in the middle of the tortilla. Grate a carrot, or use carrot sticks, and place it on top of the lettuce along with the corn kernels. Lay the roast beef slices on top of the vegetables to hold them in place.
  • Fold the sides in, and one end over the filling, rolling the wrap tightly as you tuck the sides in. Slice in half.

Pack it for lunch:

  • Place the wrap inside the main compartment of a lunchbox. Add healthy sides, like fresh fruit and veggies in separate compartments to complete the lunch.
  • Cover with the lid and refrigerate until ready to pack inside a lunch bag with or without an ice pack.
