This recipe calls for serving it on lettuce to add extra veggies to the kids’ lunches. However, it is so versatile, you can use it in many other ways. How about building an egg salad wrap or as a dip for pitas in a bento box? Delicious!
All you need are hard-boiled eggs, veggies, and seasonings. Did I even mention this salad has bacon? TASTY with capital letters, yes! Feel free to make this salad even tastier by adding some pickles, olives, onions, or whatever sounds good for you!

Having hardboiled eggs in the fridge ready to go makes it super quick to whip up this egg salad. - Assemble
Make a bed of lettuce in the large compartment of the lunch box or use a lunch box with a bowl-like shape for salad. Top the greens with the egg salad and the remaining toppings. Pack fruit for lunch, lunch sides, and healthy snacks separately. - Refrigerate

Egg Salad with Lettuce Greens

Ingredients
- 2 hard boiled eggs
- 2 tablespoons Greek yogurt or mayo
- 1 teaspoon yellow mustard
- ¼ teaspoon paprika
- Pinch of salt and pepper
- 2 handfuls salad greens
- ½ Roma tomato, diced
- Bacon crumbles, optional
Instructions
Make the egg salad:
- Finely chop the hard boiled eggs on a cutting board and transfer them into a bowl. Add the Greek yogurt or mayonnaise, mustard, paprika, salt and pepper, and mix well to combine the ingredients. Adjust more mayo or yogurt if necessary to your liking.
Assemble the lunch:
- Fill the large compartment of a lunch box with the salad greens. Top with the egg salad, diced tomatoes, and bacon crumbles (if using).
- In separate compartments or containers, pack fresh fruit, veggies, and snacks. Refrigerate until ready to pack inside a lunch bag with an ice pack if necessary.
