Lunchbox Mediterranean Pizzas
You don’t need to reinvent the wheel to make a quick and easy school lunch that disappears fast! After a Mediterranean dinner the other night, I repurposed the leftovers into these healthy lunchbox pizzas that bake up in just 7 minutes.
Similar to my Greek Pita Wrap, and 7 Layer Snack Cups, these Mediterranean pizzas are loaded with creamy hummus, olives, and tangy feta cheese! Plus, they fit perfectly into a lunchbox for a protein-rich, filling lunch.
What You Need
You can find exact amounts in the recipe card below, but here’s what you’ll need to build this pizza in no time:
- Naan flatbread or pita bread: this makes such a quick and easy pizza base.
- Hummus: helps the other ingredients stick to the base while adding flavor and protein.
- Kalamata olives: skip them or use another type of olive if you aren’t a fan.
- Roasted red pepper strips: roast your own and cut them into strips or use jarred peppers to save time.
- Shredded mozzarella: also great for holding everything in place when it melts.
- Crumbled feta: gives this pizza that unmistakable mediterranean flavor!
- Sides: fresh fruits and veggies like strawberries and cucumber slices round out this lunch and boost nutrition.
How to Pack Personal-Size Pizzas for Lunch
These personal Mediterranean pizzas hold up well in a lunchbox, even at room-temperature. The hummus won't make the crust soggy (major win!), and the toppings hold up well without any reheating. Here’s how to make it:
- Prep
Preheat your oven to 400°F and move the oven rack to the center so that everything bakes evenly and your toppings get melty without the bottom of the crust getting burnt. Line a baking sheet with parchment paper (easy cleanup!) and place your naan on top. - Bake pizza
Spread about 3-4 tablespoons of hummus on the flatbread. Sprinkle on the chopped olives, a few red pepper strips, a little shredded mozzarella, and a crumble of feta and bake. It only needs about 7 minutes in the oven so keep an eye on the pizza. Since naan is already fully baked, you're really just warming everything up and getting that cheese nice and melty. - Pack it for school
Let the pizza cool completely, then slice it into quarters. Pack the slices in a hard container, and place it into a lunch bag along with any additional lunch sides.

Boost energy with wholesome extras like yogurt or a handful of crunchy banana chips. Toss in a protein muffin or a hard-boiled egg to keep kids full and focused even longer.
Keep wet and dry separate
Pizza, sandwiches, and wraps should be in their own compartment in a bento-style lunchbox or packed separately from wetter ingredients like fruits and veggies to keep them from getting soggy.

Ingredients
- 1 regular-size naan flatbread
- 2 tablespoons hummus
- 1 tablespoon chopped Kalamata olives
- 1 tablespoon roasted red pepper strips
- 1 tablespoon shredded mozzarella
- 1 tablespoon crumbled feta
Instructions
Prep
- Preheat oven to 400°F.
Bake Pizza
- Spread hummus evenly over naan. Top with olives, red peppers, mozzarella, and feta.
- Bake for 7 minutes, until cheese is melty and bubbly.
Pack for school
- Let cool completely. Slice into quarters and pack in a lunchbox with healthy sides, like fruit and veggies. Include an ice pack, if necessary.
