Today I’m sharing five fresh and delicious school lunch ideas with hard-boiled eggs that you can prep ahead for the week.
Making a variety of lunches using only one main ingredient isn’t as hard as it sounds. You can pack fresh school lunches; no one will get bored all week long.
I’ve done this with turkey, ham, chicken salad, hummus, and today- hard-boiled eggs!

Eggs are a high-protein food and one of the most versatile ingredients for all sorts of meals. I often keep a batch of hard-boiled eggs in my fridge for a quick snack or for lunches like the ones I’m sharing here.

Hard-Boiled Eggs for Lunch
These lunch ideas are some of our favorite way to serve hard-boiled eggs. When I’m not making homemade egg salad with them, I’m usually packing one of these recipes for my kids’ lunches or my own office lunch.
1. Lunchbox Deviled Eggs
Everyone loves these as party food, so why not pack them for an easy lunch? This recipe uses hummus instead of mayonnaise for the creamy center. It’s just as tasty and has fewer calories.
2. Avocado & Egg Toast
If you love avocado toast for breakfast, try adding sliced hard-boiled eggs for an extra boost of protein. It makes a satisfying lunch that’s full of healthy fats and will hold you over for hours.
3. Cobb Salad Wrap
This healthy lunch wrap is jam-packed with all those delicious Cobb salad ingredients like cheese, tomatoes, avocado, and chopped eggs. It’s a must!

Healthy School Lunch Ideas with Hard-Boiled Eggs
Ingredients
Lunchbox Lettuce Cups
- 3 hard-boiled eggs
- 2 strips bacon, cooked and crumbled
- ½ cup halved grape tomatoes
- ½ tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 large lettuce leaves
Instructions
- In a medium bowl, combine the hard-boiled eggs, bacon, and tomatoes. Drizzle with olive and season with salt and black pepper, toss to combine.
- Layer one lettuce leaf on top of another to create a “cup”. Fill each lettuce cup with the hard-boiled egg and bacon mixture. Serve immediately or if packing for lunch, divide the lettuce cups between 2 lunch containers.
