Bagel Sandwich with Leftover Chicken

At my house, bagels are the ultimate multitaskers! Great for breakfast or a simple school lunch. I can pretty much throw anything between two bagel slices and come up with an effortless deli-style lunch like this bagel sandwich with leftover chicken.

There’s just something about the chewy texture that makes bagels extra awesome, and they're way more filling than regular bread. Like my avocado egg salad sandwich and BLT wrap, this bagel is perfect for teens like mine with bigger appetites!

What You Need

This bagel sandwich is quick to assemble, pack, and customize! Check the recipe card below for exact measurements, but here's what you'll need plus some possible swaps:

  • Bagel: go classic or experiment with different bagel types. For a low carb, gluten-free option, my everything cloud bagels are durable, soft and just as yummy!
  • Mayonnaise and Mustard: optional, but they add a nice kick. You can also experiment with more flavorful sauces like pesto or hummus.
  • Leftover Chicken: shredded or sliced; perfect for using up last night's dinner!
  • Cheese: pretty much any cheese is going to taste amazing on this sandwich. Cheddar, Swiss, provolone-pick your fave.
  • Tomato and Lettuce: adds color, and freshness and a boost of nutrition (or skip them if your kid isn't a fan).

How to Pack a Chicken Bagel Sandwich for School Lunch

The secret to a sandwich that survives the lunchbox is packing it correctly! Follow these tips to ensure success:

  1. Assemble Bagel Sandwich
    Spread mayonnaise and mustard on each bagel half. Add lettuce, tomato, leftover chicken, and cheese, layering them so the lettuce and cheese create a barrier to keep the bagel from getting soggy.
  2. Pack for School
    Use a sturdy lunch container that fits the sandwich snugly to prevent it from getting squished in the lunch bag. Keep healthy sides separate and refrigerate everything until it's time to head out.

Whether you eat this sandwich at home or pack it for later, these additional tips will keep it intact and tasting just as great as when you made it:

Use the right container
The best way to keep this lunch fresh and appealing is to use a hard, sandwich sized container. This way, the walls will protect the sandwich in the lunch bag and keep it intact!

Keep it cool
Adding an ice pack inside the lunch bag will keep the food fresh and safe to eat until it's lunchtime.

Bring on the bacon
I believe that bacon makes everything just a little bit better. Quickly microwave bacon to crispy perfection in minutes and add it to this sandwich for an amazing flavor upgrade!

Add extra sides
Boost nutrition with homemade zucchini chips or apple chips for that crunch that kids love! Other quick favorites include oatmeal raisin granola bars and chocolate covered banana bites.

Ingredients

  • 1 bagel
  • Mayonnaise, optional
  • Mustard, optional
  • 2 oz leftover chicken
  • 1 slice cheese
  • 2 slices tomato, optional
  • 2 lettuce leaves

Instructions

Assemble the sandwich:

  • Spread mayonnaise and mustard on each of the bagel halves.
  • Top the mayonnaise side with lettuce, tomato, chicken, cheese, and close the sandwich with the other bagel half.

Pack it for school:

  • Slice the bagel sandwich in half and pack it inside a lunch container. Add healthy sides, like fresh fruit and veggies, to his lunch in a separate compartment or containers.  Refrigerate until ready to pack inside a lunch bag, with or without an ice pack.
