Easy Stuffed Avocado with Egg Salad for Lunch

Avocado in the lunchbox? Yes! Packing an avocado for inside a lunch box is possible -and super tasty. This stuffed avocado is filled with a mayo-free egg salad recipe you can make real quick with the recipe below.

Some days, when I make a peanut butter sandwich for lunch, I’ll add this stuffed avocado with egg salad to ensure the lunch is packed with protein.

Ingredients

You’ll find the measurements for this stuffed avocado in the recipe card, but here is why I selected the ingredients to make this lunch nutritious:

  • Egg: boiled on the stovetop, cooked in the Instant Pot, or baked in the oven.
  • Greek yogurt: a healthier and high-protein option to mayo. Use your favorite.
  • Yellow mustard: adds a tangy flavor.
  • Paprika: more flavor! Use regular or smokey paprika.
  • Salt and pepper: seasonings that balance out the flavors.
  • Ripe avocado: creamy and nutritious!
  • Lemon juice: a little zest and helps the avocado from turning brown.

How to Pack Egg Salad Stuffed Avocado for School Lunch

While you might not think of packing egg salad and avocado for school, I include some tips in the simple steps that make this a good lunch idea:

  1. Make the egg salad
    Chop the hard-boiled eggs and mix well with Greek yogurt (or mayonnaise), mustard, paprika, salt and pepper. Save time by boiling the eggs ahead.
  2. Assemble the lunch
    Place half of an avocado in the lunchbox and scoop the egg salad on top. Alternatively, you can add avocado pieces with the salad on top. Add your favorite school lunch sides.
  3. Refrigerate
    Refrigerate until ready to pack in the lunch bag with an ice pack.

Tips for Packing Stuffed Avocado for School

How do you pack egg salad stuffed avocado that remains neat and appealing until lunchtime? Follow these packing tips!

Use the right container
You want a container that is almost a perfect fit so that the avocado isn't rolling all over. You can use individual containers or a bento box container with separate compartments where you can add your kid’s favorite sides. Here are my top picks for lunch containers.

Save time in the morning
This school lunch is perfect to make ahead! Prep the egg salad the night before and then quickly assemble it in the morning. This salad can be stored in the fridge for up to four days to build other high-protein lunches, like this Egg Salad Wrap or this Egg Salad Bento.

Customize flavors
Yellow mustard and paprika are classic for egg salad, but if they aren't your favorite flavors, you can always play around with your spices and try garlic powder or spice it up with a bit of siracha. Have fun with it and make it how you and your family will like it best!

What avocado to choose?
Pick a nice ripe avocado, making sure you can still slice and scoop it out since it is acting as vessel.

Keep the avocado from browning
Squeezing lemon juice onto the avocado before adding the salad on top will slow down the oxidation process. No fresh lemons on hand? The bottle of lemon juice will work just fine.

Refrigerate the salad
Once the salad is made, you’ll want to refrigerate for at least an hour so that the eggs and spices have time to develop and give the best flavor experience!

Build a complete lunch
You can pack this stuffed avocado with some veggies, fruits, pita wedges, whole grain crackers, or a healthy school dessert your kid likes.

Ingredients

  • 1 hard boiled egg
  • 1 tablespoons Greek yogurt or mayo
  • ½ teaspoon yellow mustard
  • Pinch paprika
  • Pinch salt and pepper
  • ½ ripe avocado, pitted
  • 1 tablespoon lemon juice, about ½ lemon

Instructions

Make the egg salad:

  • Finely chop the hard boiled egg on a cutting board and transfer it into a bowl. Add the Greek yogurt or mayonnaise, mustard, paprika, salt and pepper, and mix well to combine the ingredients. Adjust more mayo or yogurt if necessary to your liking.

Assemble the lunch:

  • Remove the pit from the avocado and place it in the lunch container. Squeeze the lemon over the avocado and scoop the egg salad on top. Alternatively, you can score the avocado with a knife and use a spoon to remove the avocado pieces directly inside the lunch container. Squeeze the lemon on top of the avocado and scoop the egg salad on top.
  • In separate compartments or containers pack fresh fruit, veggies, and snacks. Refrigerate until ready to pack inside a lunch bag with an ice pack if necessary.
