Easy School Lunch Wrap with Canned Chicken

Laura Fuentes holding a stack of lunchboxes and a school lunch bag

After more than a decade of making school lunches, I always keep a few cans of chicken in the pantry for days when there aren’t leftovers in the fridge. Mix it with a little ranch or mayo, roll it into a tortilla, and you’ve got an easy high-protein lunch in minutes.

Chicken wraps are always a hit in my house, and this is the one I make when I need something quick!

How to Make a Canned Chicken Lunch Wrap

  1. Make the filling
Drain the canned chicken well, then mix it with ranch or mayonnaise and your favorite seasoning. Use a fork to break apart any larger pieces of chicken.
  2. Assemble
Lay the tortilla flat and add lettuce if you like, then add the chicken mixture. If you’re skipping the lettuce, don’t spread the chicken all the way to the edges; keep the filling toward the center to make the wrap easier to roll and help keep moisture away from the edges.
  3. Roll it up
Fold in the sides, then roll the tortilla tightly around the filling. Place it seam-side down in the lunch container so it stays closed.
  4. Pack for lunch
Keep the wrap in a hard lunch container so it doesn’t get smashed, and refrigerate it until you’re ready to pack the lunch bag.

Laura’s School Lunch Packing Tips

What can I add to a canned chicken wrap?

Cucumber, shredded carrots, avocado, cheese, or greens are all easy additions. Just don’t add so much that the tortilla becomes difficult to roll. For more filling ideas, check out these lunch wraps.

How do you keep this wrap from getting soggy?

Start by draining the chicken really well and use only enough ranch or mayo to hold the mixture together. If you like lettuce, place it against the tortilla before adding the chicken to create a barrier. If you don’t want lettuce, keep the chicken mixture toward the center and avoid overfilling the wrap.

Can I make it the night before?

Yes. Assemble the wrap, place it in a covered container, and refrigerate it overnight. I prefer to leave it whole and slice it right before packing so the filling stays tucked inside.

How do you keep the wrap from getting smashed?

A sturdy lunch container works much better than a zip bag. Choose one that fits the wrap without leaving too much room for it to move around, and keep juicy fruit and other wet sides in separate compartments.

Does a canned chicken wrap need an ice pack?

Yes. Keep it refrigerated until you’re ready to leave and pack it in an insulated lunch bag with an ice pack to keep the chicken filling cold until lunchtime.

Ingredients

  • 5 oz can of chicken, about ½ cup, drained
  • 2 tablespoons Ranch or Mayonnaise
  • ¼ teaspoon seasoning, any all-purpose
  • Lettuce leaves
  • 1 large tortilla

Instructions

Make the chicken salad:

  • In a bowl, combine the canned chicken with the Ranch or Mayonnaise and your favorite seasoning. Use a fork to break up the bigger chunks and combine.

Assemble the wrap:

  • Place the tortilla on a flat surface and layer a couple of lettuce leaves on top.
  • Scoop the chicken mixture on top of the lettuce, placing it in the middle of the tortilla. Fold the sides in and one end over the chicken salad, rolling the wrap tightly. Slice in half.

Pack it for lunch:

  • Place the chicken wrap inside the main compartment of a lunchbox. Add healthy sides, like fresh fruit and veggies in separate compartments to complete the lunch.
  • Cover with the lid and refrigerate until ready to pack inside a lunch bag with or without an ice pack.
