Easy School Lunch Wrap with Canned Chicken

After over a decade of making school lunches, I've learned that simple, tasty recipes are a lifesaver-especially when they're also healthy and quick to prepare, like this canned chicken wrap, a protein-rich lunch idea.

Chicken wraps are always a hit in my house, and when my kids start asking for them but all I have is canned chicken, this go-to recipe is guaranteed to keep everyone happy.

Ingredients

The measurements can be found in the recipe card below, but first, a few simple notes when making lunch wraps with canned chicken:

  • Canned Chicken: A convenient and protein-rich option that's perfect for busy mornings since it's already cooked and ready to use. You can also use leftover grilled chicken or rotisserie chicken.
  • Ranch or Mayonnaise: Adds creaminess to the chicken salad. Ranch offers a tangy flavor, and Greek yogurt is another great option.
  • Seasoning: A little bit of seasoning goes a long way in boosting flavor. Use any seasoning you like: all-purpose, garlic powder, onion powder, or dried herbs are a few ideas.
  • Lettuce Leaves: Romaine, iceberg, or any leafy green your kids enjoy will offer a fresh crunch. For an extra boost of nutrition, try adding spinach or kale.
  • Tortilla: Whole wheat, spinach, flavored, or gluten-free tortillas all work.

How to Make a Canned Chicken Lunch Wrap

A few tips when making sandwich wraps like this one so the canned chicken filling stays in place include:

  1. Make the salad
Drain the canned chicken and mix it with your choice of Ranch or mayonnaise and seasoning, using a fork to break up any large chunks.
  2. Line the tortilla with lettuce
Lay out your tortilla and place a couple of lettuce leaves on top-this adds a layer of freshness and helps prevent sogginess on the wrap.
  3. Wrap it up
Scoop the chicken salad onto the lettuce, then fold in the sides and roll the tortilla tightly to ensure everything stays neatly inside.

School Lunch Packing Tips for Chicken Wraps

Packing this wrap for school with these tips will help keep the wrap fresh and delicious until lunchtime:

Add Nutrition:
Add sliced cucumbers, shredded carrots, or avocado to the wrap.

Prevent Sogginess
If you're making the lunch ahead of time, refrigerate it and wait to slice it in half right before packing it in the lunch bag.

Pack Sides Separately:
Always store fresh fruit and veggies in another compartment or separate snack box to keep everything fresh.

Other Chicken Wraps for School Lunches

If chicken wraps are winners at your house, try this chipotle chicken, a chicken avocado wrao, a curried chicken, or crispy chicken wrap. Easy, fast and delicious!

Ingredients

  • 5 oz can of chicken, about ½ cup, drained
  • 2 tablespoons Ranch or Mayonnaise
  • ¼ teaspoon seasoning, any all-purpose
  • Lettuce leaves
  • 1 large tortilla

Instructions

Make the chicken salad:

  • In a bowl, combine the canned chicken with the Ranch or Mayonnaise and your favorite seasoning. Use a fork to break up the bigger chunks and combine.

Assemble the wrap:

  • Place the tortilla on a flat surface and layer a couple of lettuce leaves on top.
  • Scoop the chicken mixture on top of the lettuce, placing it in the middle of the tortilla. Fold the sides in and one end over the chicken salad, rolling the wrap tightly. Slice in half.

Pack it for lunch:

  • Place the chicken wrap inside the main compartment of a lunchbox. Add healthy sides, like fresh fruit and veggies in separate compartments to complete the lunch.
  • Cover with the lid and refrigerate until ready to pack inside a lunch bag with or without an ice pack.
