Packed with plant-based protein, this falafel wrap is your new go-to for a healthy, satisfying school lunch!

A falafel wrap is an easy way to turn leftover or frozen falafel into a filling lunch in about 5 minutes. Here, I’ll show you how to layer and roll it so the tortilla stays fresh instead of soggy until lunchtime.

Tortilla Wrap with Falafels

My teenage daughter went through a serious Mediterranean-food phase, and this falafel wrap started with dinner leftovers. We had falafel in the fridge, tortillas on hand, and in less than 5 minutes she had a healthy school lunch ready to go.

That’s one reason sandwich wraps are always in our lunch rotation: they’re an easy way to turn leftovers into something completely different. If you don’t have tortillas, the same ingredients make a great falafel salad.

How to Make a Falafel Wrap

The order you add the ingredients matters when you’re packing this for later. Keeping the wetter ingredients away from the tortilla helps prevent it from getting soggy.

  1. Layer
Spread a thin layer of hummus over the tortilla and add the lettuce. Place the tomato over the lettuce, then add the falafel. The lettuce creates a barrier between the juicy tomato and the tortilla.
  2. Add the sauce
Drizzle a small amount of tzatziki or Ranch over the filling. If you like a lot of sauce, pack the extra separately and add it when you’re ready to eat.
  3. Roll
Fold in the sides and roll the tortilla tightly, tucking the filling in as you go so everything stays put.
  4. Pack for lunch
Roll it tightly and pack it in a container that fits the wrap fairly snugly so it can’t move around and unroll. You can also wrap the bottom half in foil or parchment, which makes it easier to hold while eating.

Laura’s School Lunch Packing Tips

How do you keep a falafel wrap from getting soggy?

Use the lettuce as a barrier between the tortilla and wetter ingredients like tomato. Go easy on the sauce, too. If you like extra tzatziki or Ranch, pack it separately and add it right before eating.

Can I use frozen falafel?

Absolutely. Frozen falafel makes this an especially easy lunch. Cook it according to the package directions and let it cool completely before assembling the wrap. Warm falafel creates steam inside the container, which can soften the tortilla. You can also use leftover homemade falafel straight from the fridge.

Can I make a falafel wrap the night before?

Yes. Assemble it with cooled falafel, don’t overdo the sauce, and refrigerate it in a covered container overnight. If you’re using especially juicy tomatoes or lots of sauce, I prefer adding those in the morning or packing the sauce separately.

Does a falafel wrap need an ice pack?

Yes, when you’re taking it to school or work, pack it in an insulated lunch bag with an ice pack to keep the falafel, hummus, vegetables, and sauce chilled until lunch.

  • 1 large flour tortilla
  • Hummus or tzatziki, optional
  • 2 large green lettuce leaves
