Avocado Sandwich Pinwheels for Lunch

One of my specialties is turning tortillas into an epic lunch my kids will devour. When it comes to this versatile ingredient, there’s nothing I can’t wrap, grill, or roll it with, and these avocado sandwich pinwheels are one of my kids’ favorite combinations.

These are packed with nutrition from the avocado and deliciousness from their cheesy bacon crumbles combination. Their bite-size gives them their ultimate kid appeal that ensures they’re eaten at lunch.

Ready to pack this quick and easy lunch that’s ridiculously tasty? Better make two and make one for yourself too!

What You Need

The simplicity of these avocado pinwheels is hard to beat. Take a look at these ingredients since some can be swapped to meet your child’s dietary needs:

  • Tortilla: to make pinwheels you’ll need a large wrap or burrito-sized tortilla. Plain, spinach, flavored, or gluten-free can be used here.
  • Avocado: the glue that holds the filling in these. Use a ripe avocado or swap it for ready-made guacamole.
  • Mayonnaise: thins out the mashed avocado and makes it spreadable. Switch it out with Greek yogurt for a healthier version or use homemade Greek Ranch dressing for a flavor boost!
  • Bacon: regular or turkey can be cooked in the microwave for 2 minutes and crumbled quickly.
  • Cheese: I used white Cheddar, but any shredded cheese will do!

How to Assemble Tortilla Pinwheels

What I love the most about these avocado tortilla pinwheels is how quickly they pack for lunch. Some tips that make each step easier and keep them fresh include:

  1. Prep
    First, make the avocado and mayo (or Greek yogurt) spread. Adding a dash of lemon will help prevent the avocado from browning.
  2. Make the pinwheels

    Spread a thin layer of the avocado mixture onto the tortilla and then layer up the rest of the ingredients on top.
  3. Roll
& slice
    Rolling the tortilla wrap tightly will keep the ingredients inside each piece. Slice them right before packing them in your kid's lunch box to ensure maximum freshness.
  4. Pack for school
    Pack the pinwheels in a lunch container with healthy sides, like fruit and veggies. Keep the lunch container in the fridge or pack it inside a lunch bag with an ice pack.

Tip: Use a serrated knife when slicing the pinwheels so they don’t get flat! Instead of pressing straight down, make a gentle sawing motion to cut through the pinwheels.

How to Pack Tortilla Pinwheels for School Lunch

A well-packed lunch is a happy lunch! Follow these extra tips for packing these tortilla pinwheels so they keep their shape until your kid opens the lunch box:

Avoid soggy pinwheels
Pack pinwheels in their own compartment or inside a separate lunch box so they don’t absorb any moisture from other ingredients.

Use a sturdy lunchbox

Keep hands clean
Include a napkin or paper towel with the lunch so your child can wipe their hands when they’re done.

Make it a meal
Add more nutrition and keep kids full until the end of the day by adding fruit with the lunch or veggies like cherry tomatoes, sliced cucumber, or baby carrots.

Add a sweet treat
Everyone loves finding a little sweet treat in their lunchbox. Whether it's a homemade cookie, leather fruit, this extra touch will make their day a little sweeter. Even one of these homemade snacks have loads of appeal.

Use an ice pack
Regulate the temperature inside the lunch bag by adding one of these ice packs to keep the food fresh until it’s time to eat.

Ingredients

  • 1 large flour tortilla
  • ¼ avocado, mashed
  • 1 teaspoon mayo or Greek yogurt
  • 1 slice bacon, cooked and crumbled
  • 2 tablespoons grated cheddar cheese

Instructions

Make the pinwheels:

  • In a small bowl, combine the avocado with the mayonnaise or Greek yogurt.
  • Spread the avocado mixture in a thin layer around the tortilla. Sprinkle the bacon and the shredded cheddar cheese on top.
  • Roll the tortilla tightly, slice it in half, and then into 1-inch pieces.

Pack for school:

  • Place the pinwheels inside a compartmentalized lunch container. Add healthy sides, like fruit and veggies.
  • Refrigerate the lunch until you're ready to pack it inside an insulated lunch bag and include an ice pack if necessary.
